Salade Russe

¾ cup Mayonnaise
4 Potatoes (for 1.5 cup diced)
3 Beets (for 1.5 cup diced)
3 Carrots (for ½ cup diced)
½ cup Onions
8 cups Water
3 tsp Salt

Preparation:
1- In a large pan, add potatoes, beets, carrots, onions, salt and water.
2- Once vegetable are cooked, let cool. Do not overcook.
3- Dice vegetables to about ¼ to ½ inch. (Onions was used just for flavor)
4- Mix all diced vegetables in a large bowl.
5- Add mayonnaise. Mix well.

Serve as a side dish.
