Soup Joumou

(Haitian style pumpkin soup)

1.5 lb Cooked beef or chicken (optional)

5 cup Beef (or vegetable) broth

1/2 cup Monayiti pumpkin (calabaza)

1/3 cup Spaghetti

1 cup Rigatoni (or similar tube shaped pasta)

2 cups Turnip (diced)

1 cup Carrot (sliced)

1.5 cup Yautia (Malanga root), diced

1/3 cup Celery 2 cups Cabbage (cut 2 to 3 in)

2 cups Potato (diced)

1 tsp   Salt (to taste)

2 tsp   Bouillon powder

Hot pepper (optional)

Peel and cut all vegetables into small pieces. Add Monayiti pumpkin powder to broth, add cooked meat to a large pot. Let boil. Add vegetables, salt, bouillon powder and hot pepper. Ensure all vegetables are cooked. Add pasta last. Let boil for 5 min. Cover the pot so the pasta can continue to soften. Serve warm.
