We are very proud to provide several varieties of chocolate products made with cacao beans from Haiti. We are proud to present Tahomey chocolate, Hispaniola chocolate, as well as Monayiti made from a chocolatier who uses cacao beans from Haiti or surrounding areas.
In general, there are 3 main varieties of cacao beans: criollo, forastero, and Trinitario. Criollo is by far the highest quality beans even though the other varieties are more popular and mass produced. Criollo is sweet and a bit more expensive and is found mostly in premium brands. I love criollo chocolate because it is not bitter. I can drink my hot chocolate without adding too much sweetener.
